Rolled Minute Steaks

4 slices yearling beef, pounded thinly
4 teaspoons French mustard
salt and pepper
½ red pepper, chopped
½ green pepper, chopped
125 g fresh mushrooms
1 large white onion, chopped
2 teaspoons tarragon
60 g butter for frying

Spread each steak slice with a thin layer of mustard. Season lightly. Sprinkle over peppers, mushrooms and onion. Spread over remaining mustard. Sprinkle with tarragon. Fold sides of each steak over to the middle and roll up to form a neat parcel. Secure with a cocktail stick. Melt butter in a frying pan over a medium gas flame. Add steaks and cook gently for approximately 10 minutes. Remove cock- tail sticks. Serve with French salad and sauteed potatoes.
