Savoury Lamb

Ingredients
1 kg lean lamb, cut into 2 cm cubes
seasoned flour
3 tablespoons oil
4 small onions, sliced
1 x 454 g can tomato soup
2 cups stock
2 tablespoons sherry
1 tablespoon brown sugar
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
salt and pepper
2 carrots, sliced
1 swede, sliced
4 sticks celery, chopped
1 red pepper, chopped into 2.5 cm dice
1 green pepper, chopped into 2.5 cm dice

Toss lamb in seasoned flour. Heat oil in a large saucepan and brown lamb. Add onions, saute until transparent, then add remaining ingredients except for vegetables, cover and simmer over a low gas flame for 1 hour. Add vegetables to lamb mixture, cover and simmer over a low gas flame a further ¾ hour or until vegetables are tender.
