3 cups cooked rice, drained
60 g butter, melted
½ red and ½ green pepper, chopped
1 small onion, chopped
salt and pepper
½ cup dried apricots, chopped
½ cup prunes, stoned and chopped
Toss onions in butter until transparent. Add peppers, prunes, apricots and rice. Season. Heat through over a medium gas flame and serve immediately.
