Seasoned Rabbit Casserole

750 g rabbit pieces
2 cups fresh breadcrumbs
1 onion, chopped
salt and pepper
1 tablespoon chopped parsley
½ teaspoon mixed herbs
1 egg
1 cup chicken stock

Soak rabbit pieces in salted water for1 hour, drain. Mix together the bread-crumbs, onion, salt, pepper, parsley, egg, herbs. Place half the rabbit pieces in the base of a greased ovenproof dish, sprinkle with half the seasoning mixture. Place remaining rabbit over seasoning, top with remaining seasoning. Pour over the stock. Cover and bake in the lower half of a gas oven 160°C for 1-1½ hours. Remove lid for the last 15 minutes of cooking.
