Shredded Beef with Oyster Sauce

250 g beef
dash white pepper
½ teaspoon bicarb. soda
½ teaspoon salt
1 teaspoon sugar
4 teaspoons cornflour
½ egg white
1 cup oil for frying
2 tablespoons oil
2 cloves garlic, chopped
30 g root ginger, sliced
½ cup water
dash pepper
1 tablespoon oyster sauce
1 teaspoon thick black sauce
1 teaspoon sugar
2 teaspoons cornflour

Slice the beef thinly across the grain. Combine pepper, bicarb. soda, salt, sugar, cornflour, egg white, and mix well. Heat oil over a high gas flame, reduce flame to medium, add beef and fry 1 minute. Drain meat and return oil to container. Heat 2 tablespoons oil in a clean frying pan, add garlic and saute 1-2 minutes. Add ginger and beef. Combine water, pepper, oyster sauce, black sauce, sugar and cornflour. Add to pan, bring to the boil, stirring constantly. Taste to adjust seasonings. For variation, add green peppers, chillies, carrot, bamboo shoots, peas, celery, etc., to this dish.
