Spare Rib King


1½ teaspoons salt
1 teaspoon allspice
2 tablespoons sugar
1 teaspoon thick black sauce
1 tablespoon sherry or ginger wine
½ teaspoon meat tenderiser
½ teaspoon bicarbonate soda
2 teaspoons cornflour
1 teaspoon sesame oil
dash white pepper
6-8 pieces pork loin 5-10 mm thick
deep fat for frying

Combine all the marinade ingredients Flatten pork with a meat mallet. Marinate pork for 2 hours. Heat oil in a frying pan or wok over a high gas flame, reduce flame to medium and fry the chops for approx 10 minutes on each side. Serve with Chinese pickles.
