Veal Pigalli

Ingredients
4 thin slices of veal
2 tablespoons butter
2 onions, sliced
1 clove garlic, crushed
½ cup stock
2 tablespoons tomato paste
salt and pepper
125 g Mozzarella cheese, sliced

Fry veal in butter until tender. Remove and place in an ovenproof dish. Add onions and garlic to the pan, and brown lightly. Place on top of veal and cover with tomato. Add stock and tomato paste and season well. Cover with slices of cheese and bake in the upper half of a gas oven at 220°C for 15 minutes, or place under a hot gas grill to brown the cheese.
